Ingredients
Cake:
  • 250 ml sugar
  • 250 ml flour
  • 1 tsp baking powder
  • 2 large eggs
  • 1/4 tsp salt
  • 1 tsp vanilla essence
  • 1/2 tsp almond essence
  • 115 g butter melted
Berry Cheese Layer:
  • 1 tbsp gelatin dissolved in 100ml of boiled water at room temp
  • 400 g fresh berries
  • 5 tbsp sugar
  • 300 g cottage cheese
  • 300 ml heavy cream (30-36t) whipped with 1 tbsp sugar
  • 200 ml sour cream whipped with 1 tbsp sugar
Lemon Curd Soufflé layer:
  • 1 lemon zest and juice
  • 300 ml cream
  • 250 ml sour cream
  • 300 g cream cheese
  • 10 tbsp sugar
  • 1 sachet of vanilla sugar
  • 1 tbsp gelatin dissolved in 100ml of boiled water at room temp
Mint Marshmallow layer:
  • 1 tbsp gelatin dissolved in 100ml of boiled water at room temp
  • 7 g mint leaves finely chopped with scissors
