Delicate curd cake with custard


For cake “handsome” with a diameter of 24 cm it took me:

for the basics-cakes:

400 g of cottage cheese
1 tbsp. sugar
4 yolks
2 tsp.
1 tbsp lemon juice
about 3 tbsp. of flour + for rolling

for the cream:

800-900 ml of milk
200 g plums. oil
vanilla sugar (I added)
lemon rind – optional (I took 1 tbsp)
2 tbsp flour
3 tbsp starch cards. c slide
1 tbsp. sugar
4 protein

In a blender, mix the cottage cheese (homemade is oily, but dry) with sugar.

Add the egg yolks, stir.

Soda Gasim lemon juice and add to the cream cheese. Mix.

Obtained cottage cheese and the yolk mass is left for 20-30 min before increasing in volume in 2-3 times.

Then sieve the flour, better parts.

And then on the table, covered with flour form a ball. The dough should be obedient and not to prilepite to the hands.

Then divide into 8 parts

Roll out fairly thinly and cut out a circle. I have a diameter 24 cm (personally I prefer to roll out immediately on parchment paper and then put it on a baking sheet).

I baked the cakes well, very quickly for 5-7 minutes at 180C on the top grill (but you need to look at your oven)

Since I divided the dough into 8 parts, but at the expense of scraps I came up with 10 full circles-cakes and 1 tiny.

Cakes must be completely cool.

I pre-cooked the custard on proteins:

First, proteins lightly whisk with sugar.

Add the flour and starch (it is better to sift, so there will be no lumps)

Milk bring to a boil, set aside and a thin stream to enter the proteins have to be continuously and intensively stirring with a whisk.

Again put on low heat and bring to thick.

When the cream starts to thicken add the essence and lemon zest (orange)

Butter room temperature beat with a mixer.

To enter fully cooled down under-cream the butter and carefully beat with a mixer.

All… the cream is ready and you can collect the cake.

Each Korzh grease cream.

One large and small. cakes make crumbs and sprinkle the top and sides of cake.

Put on impregnation for 4-5 hours. Cakes thin and soft, so the cake can soak up and faster.

Top can be decorated to your liking.
